Mikrobiologen, sommelieren och forskaren Jessica Heidrich inledde sin bana inom öl som student i Uppsala på 1980-talet, då som hobbybryggare. Idag är hon ett väletablerat namn i branschen med fyra svenska mästartitlar i bryggning, flitigt anlitad föreläsare och öldomare med uppdrag i hela världen. Hon har även varit tongivande i organisationer som Svenska Hembryggareföreningen, Svenska Ölfrämjandet och Föreningen Sveriges Småbryggerier.
Från mikrobiologi är steget inte långt till mikrobryggeri. Sedan 2009 är Jessica Head Brewer för S:t Eriks Bryggeri. Konceptet är att med mångfald, gränsöverskridning och kvalitet förse marknaden med nya ölkunskaper och nya smakupplevelser, vilket Jessica Heidrichs excellens är grunden för.
